Potato, Spinach & Cheese Frittata

Ingredients: 8–10 large eggs •2 medium potatoes, peeled and diced small •1 small onion, thinly sliced •1 bell pepper, diced (any color) •2 cups fresh spinach •1–1½ cups shredded cheese (cheddar, mozzarella, Gruyère, or a mix) •2–3 tablespoons olive oil •Salt and pepper, to taste •Splash of milk or cream (optional) Directions: To make it, start by heating olive oil in an oven-safe skillet over medium heat and cooking the diced potatoes with salt and pepper until golden and tender, about 8–10 minutes.
